Bonus Recipe: Rellenong Talong
Charred eggplant topped with Picadillo and an egg batter makes for a show-stopping, flavor-packed dish.
Ingredients
- 3 eggplants charred and peeled
- 2 eggs
- 1/4 cup cornstarch
- 1/4 cup water
- Picadillo prepared as above
- Spring onions for garnish
Instructions
- Flatten charred eggplants and set aside.
- Prepare a batter with eggs, cornstarch, and water.
- Heat oil in a pan, pour half the batter, and lay the eggplant flat. Top with Picadillo and remaining batter. Fry until golden brown.
- Garnish with spring onions and serve with banana ketchup.
