Bonus Recipe: Rellenong Talong

Charred eggplant topped with Picadillo and an egg batter makes for a show-stopping, flavor-packed dish.

Ingredients
  

  • 3 eggplants charred and peeled
  • 2 eggs
  • 1/4 cup cornstarch
  • 1/4 cup water
  • Picadillo prepared as above
  • Spring onions for garnish

Instructions
 

  • Flatten charred eggplants and set aside.
  • Prepare a batter with eggs, cornstarch, and water.
  • Heat oil in a pan, pour half the batter, and lay the eggplant flat. Top with Picadillo and remaining batter. Fry until golden brown.
  • Garnish with spring onions and serve with banana ketchup.
